Beet Gratin

2 bunches beets

½ cup Feta cheese, crumbled

¾ tsp pepper

½ tsp salt

1 Tbl cider vinegar

1 cup cooked beet greens

½ cup cream

¾ cup panko bread crumbs

Preheat: 375F

Clean beets, cut greens about 1” from root (save greens).  Place beets and about 2 Tbl. Water in foil, wrap and bake for about 45 minutes or until tender.  Let cool and remove stems and skins.  Slice beets about ¼ inch thick.  Put half of beets (single layer) in lightly oiled,11x7 inch baking dish.  Sprinkle with half of the cheese, pepper, salt and vinegar.  Repeat process with remaining beets, cheese, pepper, salt and vinegar.  Boil beet greens for about 3 minutes.  Drain, cool, pat dry and chop.  Spread beet greens over mixture, pour cream over beet greens.  Top with panko crumbs.  Bake at 375 for 25-30 minutes.  Enjoy!
